Valamar, Croatia’s leading hotel and resort brand, is set to unveil its newest dining destination along the stunning Poreč waterfront, spearheaded by the world-renowned chef Ana Roš.
Known for her acclaimed restaurant Hiša Franko in Slovenia’s Soča Valley – home to three Michelin stars – Roš is now regarded as a chef of distinction.
Opening JAZ by Ana Roš later this year, the Slovenian chef will bring her innovative gastronomic vision to Istria for the first time, promising a unique and exceptional dining experience.
Ana Roš, who turned her back on a promising ski-ing career, says says her memories of Istria as a child sparked inspiration in her kitchen to create Jaz, a refined yet effortless take on a restaurant where enjoying good food comes naturally, be it breakfast, lunch or dinner.
The first JAZ restaurant opened in Ljubljana in 2023, and its success prompted the expansion into Poreč. where Roš brings her hyperlocal, seasonal culinary approach to the coast.
Ana says: “JAZ is not a traditional fine dining concept. It’s my living room – a space where great food, fantastic cocktails, and the best people come together, without rules.
“It’s a little funky, a little rock ‘n’ roll – a place where you settle in and don’t want to leave.”
